Layered Fiesta Taco Salad Bake

Yes. I LOVE Mexican food and can never get enough. When we eat out it is usually at a Mexican food joint and a lot of what I make at home is Mexican too. I could seriously eat Mexican food for breakfast, lunch and dinner every day of my life. That being said, Cara over at Pearls, Handcuffs and Happy Hour recently posted this dish and I am going to add it to my rotation of Mexican meals. It is easy and good!Ingredients:

1 lb. ground beef {I used ground turkey}
1 can spicy chili beans, un-drained
1 c. salsa {I used On the Border, my favorite}
1 can corn, drained
1 pkg. taco seasoning
2 c. crushed tortilla chips
1 medium tomato, chopped
1/4 c. chopped green onion
1 c. shredded colby and jack cheese
1 large avocado, peeled and chopped
Shredded lettuce

Directions:

- Coarsely crush 2 cups of tortilla chips and place in the bottom of a deep casserole dish.
- In a large skillet, cook meat, drain and return to skillet.
- Stir in beans, salsa, taco seasoning and corn.
- Bring to a boil and stir often.
- Pour meat mixture on top of tortilla chips.
- Top with tomatoes and onions.
- Top with cheese.
- Bake at 350 degrees for 30 minutes or until cheese is hot and bubbly.
- Remove from oven and top with lettuce and avocado.
- Enjoy!
- Note: Next time I make it I think I will add a tablespoon of cumin to it and serve it with a little bit of sour cream.
