Smoked Paprika Potato Wedges w/ Sour Cream Dip

This is a super yummy and EASY side to go along with the burgers I made this weekend. This recipe also comes from Rachel Ray and it was good. You can use any kind of potato you like. I chose sweet potatoes this time and it was super tasty!Potato Ingredients:

2 large sweet potatoes, cut into wedges
Salt
2 tbls. extra-virgin olive oil
1 1/2 tbls. grill seasoning {I used McCormick}
2 tsp. smoked sweet paprika

Directions:

- Preheat oven to 450 degrees.
- Put potatoes in a large pot of water and bring to a boil.
- Add salt to taste and cook for 5 minutes.
- Drain the potatoes and put in a bowl while they are still hot.
- Add the extra-virgin olive oil, grill seasoning and paprika.
- Toss to coat evenly.
- Arrange potatoes on a cooling rack on top of a baking sheet so the heat can go all around the wedges.
- Roast until crisp for about 15-18 minutes.

Sour Cream Dip Ingredients:

1 c. sour cream
1 clove garlic grated or crushed into a paste
3 tbls. chives, finely chopped
2 tsp. hot sauce

Directions:

- Combine all ingredients in a small bowl and serve with potato wedges.
