Red Velvet Cake

This post will be my favorite post on this blog. If you know me you know my LOVE for Red Velvet Cake, but not any red velvet cake, my moms red velvet cake! She makes one for me every year for my birthday and I look forward to it year after year! I always try other red velvet cake or cupcakes but they are NEVER as good as the cake my mom makes. MMMM...my mouth is watering! Red Velevet cake is hands down my favorite dessert ever!
Ingredients:
2 Eggs
2 1/2 c. Flour
1 1/2 c. Sugar
2 sticks of butter at room temperature
1 c. Cooking oil
2 Heaping tsp. Cocoa powder
1 tsp. Baking Soda
1/2 tsp. Salt
1 c. Butter milk at room temperature
2 tsp. Vanilla
1 oz. Red food coloring

Directions:

- In a large bowl mix all ingredients with a beater.
- Distribute cake batter evenly between two round cake pans.
- Bake at 350 degrees for 30-35 minutes.

Cream Cheese Frosting

1 stick of Butter
1 (8 oz.) pkg. Cream Cheese at room temperature
1 lb. box Powdered sugar
1 tsp. Vanilla

- In a medium size bowl mix all ingredients with a beater.
- Frost cake when cake is completely cool.

Your Mom's red velvet cake has that one ingredient that no one else can duplicate......LOVE!
