Stuffed Mushrooms

Y'all. Make these stuffed mushrooms.  It is The Pioneer Woman's recipe.  Need I say more??  I will say I made them for a dinner party and they were gone in no time!  

Ingredients:

24 ounces, White Button Mushrooms

1/3 pound Hot Pork Sausage (I used regular sausage)

1/2 whole Medium Onion, Diced

4 cloves Garlic, Finely Minced

1/3 cup Dry White Wine

8 ounces, Cream Cheese

1 Egg Yolk

3/4 cups Grated Parmesan Cheese

Salt And Pepper, to taste
Instructions:
-  Wipe off or wash mushrooms in water. Pop out stems, set aside.
-  Chop mushroom stems finely and set aside.
-  In a skillet cook sausage. Let it drain on a paper towel.
-  Add onions and garlic to the same skillet you cooked the sausage in; cook for 2 minutes over medium heat.
-  Pour wine into the pan and scrape all the little bits off the bottom, allow liquid to evaporate.
-  Add in chopped mushroom stems, stir to cook for 2 minutes and set aside to cool.
-  In a bowl, combine cream cheese and egg yolk. Stir in Parmesan cheese.
-  Add cooled sausage and cooled mushroom stems. Stir mixture together.
-  Smear mixture into the cavity of each mushroom, creating a sizable mound over the top.
-  Bake at 350 degrees for 20 to 25 minutes, or until golden brown.
-  Allow to cool for ten minutes before serving.

Sausage Dip

This recipe is from my brother-in-law.  It is the perfect dip for gatherings, football season and really any time!
Ingredients:

4 (8 oz.) packages cream cheese
2 cans Rotel
1 lb sausage

Directions:

-  Cook sausage in a skillet until browned through.
-  Combine all ingredients in a crock-pot set at medium heat.
-  Stir frequently until cheese is melted.
-  NOTE:  you can make this dip as spicy as you like by using hotter rotel and spicy sausage!

Bacon Wrapped Crackers

I was watching one of the Pioneer Woman's Christmas shows and she made these little appetizers and I died!  I made them for my family's Christmas fun day and they were devoured!  They could not be easier and she said you can cook them, freeze them and then heat them up when you need them!  Perfect!
Ingredients:

1 lb  bacon
Grated Parmesan cheese
Club Crackers

Directions:

-  Cut bacon in half
-  Place club crackers on a rack with a baking sheet underneath
-  Put 1 tsp. of Parmesan on top of each cracker.
-  Wrap each cracker with a piece of bacon.
-  Bake at 250 degrees for 2 hours.

Pizza Biscuits

Ummm OK....these are amazing.  I will be making these for my kids birthday parties, appetizers for holiday parties, super bowl and any time in between!  They are so easy and so delicious!

Ingredients:

3/4 c. flour
3/4 tsp. baking powder
1/2 tbsp. garlic powder
1/2 tbsp. basil
pinch of salt
3/4 c. whole milk
1 egg, lightly beaten
1 c. shredded mozzarella cheese
1/4 c. grated Parmesan cheese
1 bag mini pepperonis
1 jar pizza sauce

Directions:

-  Preheat oven to 375 degrees.  Grease a 24-cup mini muffin pan.
-  In a large bowl, whisk together flour, baking powder, garlic powder, basil and salt.
Whisk in the milk and egg.
-  Stir in mozzarella, Parmesan and pepperoni.
-  Let mixture stand for 10 minutes.
-  Stir the batter and divide among the mini-muffin cups.
-  Bake for 20-25 minutes or until puffed and golden brown.
-  Serve with heated pizza sauce for dipping.
