
Ingredients:
1 (3 oz.) package lime-flavored gelatin
1 1/3 c. sugar
2 c. sifted flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
5 eggs, slightly beaten
1 1/2 c. vegetable oil
3/4 c. orange juice
1 tbls. lemon juice
1/2 tsp. vanilla
1/2 c. Key lime juice (from about 25 small key limes OR 4 large regular limes)
1/2 c. powdered sugar
Directions:
- Preheat oven to 350 degrees. Grease and flour three 9 inch round cake pans.
- In a large mixing bowl, mix gelatin, sugar, flour, salt, baking powder and soda. Stir to mix well.
- Add the eggs, oil, orange juice, lemon juice and vanilla.
- Divide batter evenly among the 3 pans and bake for 35 to 40 minutes.
- Cool the cakes in the pans for 5 minutes and then turn them over onto cooling racks.
- While the layers are still hot, mix the lime juice and powdered sugar and pour over each cake after piercing the layers with a fork allowing the glaze to soak in better.
- Allow cakes to cool completely.
Cream Cheese Icing:
1/2 c. butter, room temperature
1 (8 oz.) box cream cheese, room temperature
1 (1 lb.) box powdered sugar
- Cream the butter and cream cheese together until smooth.
- Beat in the powdered sugar until the icing is smooth and easy to spread.
- Add icing between each cake layer, on top and the sides.
NOTE: The cream cheese icing is optional. This cake is really good with just the glaze alone.
